Foodie Friday: Squash Like It’s Hot!

It’s fall! Time for the magical fall harvest. Apples and sweet potatoes, and winter squashes, oh my! And what should you do with all of that lovely winter squash (acorn, butternut, pumpkin, etc)? No, not decorate your house. Roast it!

Cut it in half, remove the seeds and stringy stuff, and place it open-side down in a pan with a little water. Roast at 375 until you can easily stick a fork through the skin. Then do other stuff with it.
So when it’s time for some tasty carbs, just remember…if you liked it, then you should have put some squash on it.
That didn’t make sense. Just trust me and roast some squash.
